Ingredients for Spinach Khichdi
Rice – 1 bowl
Moong dal – 1 bowl
Spinach – 1/2 kg
Peanuts – 1/4 bowl
Ghee – 1/2 bowl
Rai – 1/2 tsp
Cumin – 1/2 tsp
Green chilies chopped – 2
Asafoetida – 1 pinch
Turmeric Powder – 1/2 tsp
Red chili powder – 1/2 tsp
Coriander Powder – 1/2 tsp
Green coriander chopped – 1 tbsp
Salt – as per taste
How to make Spinach Khichdi
To make Palak Khichdi, first take rice and moong dal and wash them with clean water. After this, take the spinach and wash it thoroughly, after that chop the spinach finely. Now put some water, a spoonful of ghee in a pressure cooker and put rice, moong dal and groundnut seeds in it and keep it on the gas. When two whistles come, turn off the gas and take out the cooked mixture in a vessel and keep it aside.
Now put ghee in a pan and keep it to heat on medium flame. When the ghee melts, add mustard seeds, cumin and asafetida and let it crackle. After this, add finely chopped spinach to it and add red chili powder, coriander powder, turmeric and mix it all well with the help of a ladle. After cooking for 1-2 minutes, when the spinach becomes soft, add water as per the requirement so that the khichdi does not remain dry.
Now let the spinach cook till it boils. After this, put the pre-cooked lentils-rice-peanuts in this mixture and mix them well. Now cover the pan and let it cook for about 10 minutes. Remove the lid from time to time and keep stirring the khichdi. Your delicious Palak Khichdi for dinner is ready. Add finely chopped coriander leaves on top of it. Serve the khichdi with ghee.
